KISH: Tell us about you.
I’m Vikram Kamat. Passionate about food – both eating food and making people experience great food and hospitality.
KISH: What is your dream and how will accomplishing your dream benefit you and others?
Dr. Vikram: Having been a part of a family that’s been in the food business and being exposed to different food, culture, and people you realize that this needs to be shared and experienced by all. My dream is to have a chain of Indian food restaurants that makes great Indian food available globally to all.
KISH: Who or what inspired you to pursue this dream?
Dr. Vikram: Being privileged to be born in a family that has food in its veins I think I was born with this dream, nurtured this dream while growing up and realized it as soon as I could .
KISH: What challenges have you encountered while pursuing your dream?
Dr. Vikram: Challenges are many because Indian food firstly is a very vast cuisine and within the same business many styles,so it’s challenging what to leave out and what to keep as there’s so much to choose and then Indian food is not really adept to small kitchens unlike other cuisines. You need different ingredients, masalas, different utensils and even different equipment which makes it challenging. For a simple idli, you need a steamer, for chutney a grinder and so on.
KISH: Who or what inspired you to keep pushing regardless of the challenges you’ve encountered?
Dr. Vikram: I keep reading biographies and you realize that the biggest takeaway is perseverance and just keep Aage jao ( going ahead ) . Sometimes you may go very slow, sometimes fast but more than the pace it’s about keeping at it.
